How do you pick plants in Red Dead Redemption?

I'm playing Undead Nightmare and I need to collect 5 Desert Sage and 5 Violet Snowdrop. I'm at Gaptooth Ridge and there is Desert Sage right in front of me, but how do I get it??? There's no command or anything like "press Y to pick Desert Sage." What do I do??
